Garden Fresh Breakfast Tacos
Breakfast tacos are a staple in Austin, TX. I am sure I can credit them for at least 10 of my extra pounds. Rather than giving them up completely, I created a healthy version of my own.
Ingredients
- 2 Corn Tortillas (160 Calories)
- 2 T. Reduced Fat Shredded Cheese (40 Calories)
- 1/2 Medium Tomato, Chopped (10 Calories)
- 1 Slice Red Onion, Chopped (5 Calories)
- Pinch of Fresh Cilantro
- 1/2 Cup Egg Substitute (105 Calories)
Directions
Chop tomato and red onion. Combine with pinch of fresh cilantro and set aside. Spray pan with cooking spray and cook eggs. Meanwhile, sprinkle tortillas with cheese and microwave for approximately 30 seconds to melt cheese.Top tortillas with scrambled eggs then vegetables.
Calories are approximate. I plan to look for lower calorie tortillas to bring the total calorie count down.
