Weekly Menu Planning

Being prepared is going to be key to success in reaching my weight loss goals. After making it through my first work week I feel fantastic! I don't feel as sluggish and my skin is benefiting from the extra water consumption. In my excitement I started planning my meal plan for the week. Here's what's on the menu:

Japanese Chicken-Scallion Rice Bowl: I have high hopes for this one. I think it will make an easy and tasty lunch. I plan to freeze the servings without the scallions. I'll add them fresh when I microwave the bowl for lunch.

Tomato-Corn Pie: The ingredients in this one are intriguing, specifically the corn. The rest of it "feels" like a pizza to me. I plan to carve it up into 8 servings, put them in baggies and take to work for a snack.

Chicken & Sun-Dried Tomato Orzo: This recipe looks too good to be true. How can I go wrong with tomatoes, garlic, chicken and pasta... and I can't forget the artichoke hearts. My mouth is watering already. This one is planned for dinner Monday cause I can't wait longer than that!

Chicken Piccata with Pasta & Mushrooms: (Hold the mushrooms) Chicken Piccata is one of my favorites foods. I won't be including the mushrooms in the Eating Well version as I never have mushrooms in Chicken Piccata. I think my favorite part is the capers.

Bruschetta with Tomatoes: I must be feeling Italian today since this is the 4th of 5 recipes in the list so far that are at least Italian inspired. Can you tell I love tomatoes?

Mini Meatloves: This will be my second time making mini meatloaves. This time I plan on doubling the recipe. They freeze and microwave great which makes them perfect for work.

Once I know what I'll be making, I create a shopping list for the week based on the areas of the store. (I know it's a little over done, but it gets me in and out quick) He's a sample:
